Clark Hollow Hops was founded in 2012. We planted a test plot of Cascade, Newport, Centennial, and Perle in the spring of 2013 on, appropriately, Clark Hollow Road in the Town of Fabius, New York. We subsequently purchased a 5 acre plot of pristine farmland around the corner, also in Fabius, and will be planting 2 acres of these same varieties initially with an eye toward calculated growth as warranted by our customers.
Our hops are grown as sustainably and as naturally as possible. We do not believe in applying chemicals and will avoid doing so whenever possible. We will be happy to share with you our methods.
We plan to test additional varieties that may have not been grown yet in New York to explore the potential for unique offerings of hops right in your back yard.
We look forward to working with New York hop growers and brewers to provide a steady source of local quality hops, share resources, and educate each other so that New York can be seen as a valuable source for hops and quality beer can be brewed with local ingredients.
We are looking to become a spotlight agritourism destination for the Town of Fabius and for Onondaga County.
